Brown Char/ Bark

Brown Char makes the charcoal easier to light and adds smoke which gives your meat an all-natural smoke flavor.

Due to the all-natural nature of the wood some pieces of wood carbonize faster than others. We try to remove all of the brown char out of the process before it goes into the bag. This is a manual process and the pieces are hand-picked. Brown char has a very similar color to the correctly carbonized wood, so it is difficult to be 100% accurate when removing. So, from time to time there are pieces of partially charred wood that gets into the bag. These pieces will have a higher volatile content making them easier to light and will produce smoke which will give your meat an all-natural smoke flavor.
