What Causes Charcoal to Spark?

The sparking is caused by wood that has been carbonized that has a high concentration of wood sap. When it heats up it causes the pocket of wood sap in the wood to expand rapidly causing the sparking issue. Another cause can be the presence of a concentrated stream of air being directed at the coils that are on fire. Lastly, this may be seen in windy conditions.
